About 25 percent of Americans claim to be dieting. The commercial weight-loss business has swelled by about 14 percent annually the past five years, grossing $2.2 billion in sales last year. More growth is expected. Federal studies show that nearly 65 percent of the adult population is overweight or obese and childhood obesity has risen dramatically in recent years.
